Creamy Dumpling Soup (4 servings)
Ingredients for Dumpling Soup
- 1 tablespoon soft butter
- 1 egg plus 1 yolk
- ˝ cup heavy cream
- ˝ teaspoon seasoned salt
- Pinch of nutmeg
- Chicken broth
Preparation Method for Dumpling Soup
1. Spray top of double boiler with grease substitute. Rub with butter.
2. Beat eggs, heavy cream, salt and nutmeg together with fork. Pour into top of double boiler.
3. Cook over hot (not boiling) water for 45 minutes, or until set and firm. Turn out onto waxed paper and cool.
4. Slice into cubes. Add to clear hot broth. Serve immediately.
