Country Stew (8 servings)

Ingredients for Country Stew

  • 4 tablespoons vegetable oil
  • 3 pounds stew meat (chuck, round)
  • 4 tablespoons chopped onion
  • 4 cups water
  • 3 soup bones
  • 2 teaspoons salts
  • ˝ cup cubed rutabaga
  • ˝ cup cubed eggplant
  • ˝ cup diced green pepper
  • 1 cup cubed zucchini
  • 4 tablespoons tomato sauce
  • 1 cup spinach

 

Preparation Method for Country Stew

1. Heat oil in large pot. Add meat and brown well on all side. Push meat aside and add onion. Cook for 5 minutes.

2. Add water, soup bones and salt. Simmer for 2 hours.

3. Add rutabaga and simmer for another 15 minutes.

4. Add green pepper, eggplant and zucchini. Simmer 10 minutes. Spoon in tomato sauce and spinach and cook for another 6 minutes.
