Country Stew (8 servings)
Ingredients for Country Stew
- 4 tablespoons vegetable oil
- 3 pounds stew meat (chuck, round)
- 4 tablespoons chopped onion
- 4 cups water
- 3 soup bones
- 2 teaspoons salts
- ˝ cup cubed rutabaga
- ˝ cup cubed eggplant
- ˝ cup diced green pepper
- 1 cup cubed zucchini
- 4 tablespoons tomato sauce
- 1 cup spinach
Preparation Method for Country Stew
1. Heat oil in large pot. Add meat and brown well on all side. Push meat aside and add onion. Cook for 5 minutes.2. Add water, soup bones and salt. Simmer for 2 hours.
3. Add rutabaga and simmer for another 15 minutes.
4. Add green pepper, eggplant and zucchini. Simmer 10 minutes. Spoon in tomato sauce and spinach and cook for another 6 minutes.
