Cheddar Cheese Chicken (6 servings)
Ingredients for Cheddar Cheese Chicken
- ½ pounds mushrooms, chopped
- 8 tablespoons butter
- ½ cup heavy cream
- 2 cup shredded Cheddar cheese
- 1 tablespoon seasoned salt
- ½ teaspoon cayenne pepper
- 6 chicken breasts, split boned and skinless
- 4 eggs, beaten
- 1 2¾-ounce bag chopped pork rinds, chopped fine
- ½ cup dry white wine
Preparation Method for Cheddar Cheese Chicken
1. Preheat oven to 325°F.
2. Sauté mushroom in 4 tablespoons butter until well browned. Add cream, cheese, salt and pepper. Stir until cheese melts. Remove from heat and place in freezer until mixture becomes solid. Remove from freezer and slice into 12 equal pieces.
3. Place 1 piece of cheese in center of each chicken breast. Roll breasts and tie with string. Dip in eggs and then in pork rinds.
4. In skillet, brown chicken rolls in 4 tablespoons of melted butter. Transfer chicken rolls and butter to baking dish, and pour wine in dish. Bake in 350°F oven for 45 minutes, basting occasionally.
