Broiled Salmon (2 servings)
Ingredients Broiled Salmon
- 2 medium-sized fresh salmon steak, 1 inch thick
- 4 pinches dried tarragon
- 4 ounce dry white wine
- lime juice
- butter
- salt
- freshly ground black pepper
Preparation Method Broiled Salmon
1. Place salmon steaks in shallow, fireproof baking pan and squeeze lime juice over them. Dot steak liberally with butter, sprinkle with salt and pepper and a pinch of dried tarragon leaves for each steak. Pour wine in pan (around steak, not over them).
2. Place pan under broiler about 4 inches from flame. Cook for about 10 to 12 minutes, basting carefully during latter part of cooking so herbs are not disturbed. Turn steaks and season as before. Broil for 5 to 6 minutes. Baste after herbs have been set by heat. Skin will get crisp. Watch carefully.
