Crabmeat Omelet
Omelets are made in 2 basic ways – the plain French omelets and the fluffy
soufflé omelets. The difference is in the preparation.
The plain omelets is made by beating the whole egg and cook it over direct
heat.
The fluffy omelets is made by separating the yolks and the whites, beating
them
separately, folding them together, cooking them over direct heat, and then
baking them in the oven.
Crabmeat Omelet (6 servings)
Ingredients for Crabmeat Omelet
- 2 tablespoons butter
- ½ cup thinly sliced fresh mushrooms
- 1 tablespoon diced onion
- ½ cup crabmeat
- 1 tablespoon sherry
- 4 tablespoons cream
- 6 eggs
Preparation Method Crabmeat Omelet
1. Melt butter in skillet. Sauté mushrooms and onions in butter until
light brown. Stir in crabmeat. Simmer for 3 minutes. Add sherry and
simmer for 1 more minute. Add cream.
2. Follow recipe for the Basic Fluffy Omelets.
3. Enter half of the sautéd mixture over half of omelets just before folding and place
remaining mixture over top of omelets after it has been folded.
