Omelets are made in 2 basic ways – the plain French omelets and the fluffy soufflé omelets. The difference is in the preparation.
The plain omelets is made by beating the whole egg and cook it over direct heat.
The fluffy omelets is made by separating the yolks and the whites, beating them separately, folding them together, cooking them over direct heat, and then baking them in the oven.
