Lemon Lime Mousse
Lemon-Lime Mousse (8 servings)
Ingredients for Lemon Lime Mousse
- ½ cup butter
- 9 egg yolks
- juice of 2 lemons
- juice of 2 limes
- 3 tablespoon equivalents sugar substitute
- 2 teaspoons grated
lemon rind
- 4 egg whites
- 11/2 cups heavy cream
- 1 teaspoon vanilla extract
Preparation Method for Lemon Lime Mousse
1. Melt butter in skillet. Beat in egg yolks, one at a time with wire whisk. Remove from heat. Add juice
from lemons and limes, sugar substitute and lemon rind. Beat well. Cool.
2. Beat egg whites with 2 teaspoons sugar substitute until stiff. Fold in
lemon-lime mixture. Chill.
3. Whip heavy cream with 1 teaspoon sugar substitute and vanilla extract. Fold
into chilled mixture. Refrigerate for at least 2 hours.
